Boutique Victoria Hotel unveils 50 Nights at the Magnolia

The Magnolia Hotel & Spa ushers in a new era with brand new “pop up” dining concept

(Victoria, British Columbia) – Magnolia Hotel & Spa launches the fresh and enticing 50 Nights at The Magnolia, a fresh, local and seasonal pop up restaurant concept helmed by Chef Will Willgress.

Chef Willgress has created a new menu with nightly features and describes the direction as being “globally inspired, locally sourced”. His inspiring menu includes many favourites, but with a new twist: Beef Short Rib Curry with roasted cauliflower risotto, buttered savoy cabbage, apple raita, apricot chutney ($23); Miso Broiled Albacore Tuna with edamame puree, dashi butter, charred Chinese eggplant, pea shoots, squash fried rice, sesame, soy lacquer ($27); and Scallop & Oyster – seared scallop, crispy pork belly, crispy fried oyster, black vinegar sauce, turnip cream ($13) are already proving to be firm favourites.

Bill Lewis, General Manager at Hotel Magnolia is proud of the recent developments at the hotel and excited about the new restaurant concept: “We are thrilled to announce our interim restaurant concept 50 nights at The Magnolia,” shared Lewis. While we perfect our restaurant and lounge offering with the eventual launch a brand new dining establishment in the spring, the pop up notion provided the platform for us to offer both our hotel guests and locals an exciting style of dining, with incredible local bounty from Vancouver Island farms and suppliers at its heart.

“The upcoming permanent restaurant will complete the extensive and elegant work taking place within the hotel’s guestrooms and will mark a truly captivating series of changes for The Magnolia Hotel & Spa during 2013 and beyond, while keeping the property’s core directive anchored to offering exceptional customer service and tailored experiences for our guests.”

The Magnolia Hotel & Spa is in the process of unveiling 64 refreshed guestrooms, continuing the feel of timeless elegance to this heritage corner of the city. Featuring a lighter colour palate of taupe, smoke and pearl, the guestrooms will have a renewed lustre, while still in keeping with the traditionally inspired feel. Located moments away from the Inner Harbour and facing the magnificent Parliament building, Magnolia Hotel & Spa offers attentive and personable service that only a boutique property can.

The restaurant will only exist for fifty days, with a constantly evolving menu based on in-season and locally-sourced ingredients. Don’t miss out – call now to make reservations: 250-386-2010 or call the hotel on 250-381-0999.
